- 2 teaspoons fine salt
- 2 teaspoons instant rise yeast
- 2 cups lukewarm water (450 grams)
- 5 tablespoons extra virgin olive oil, divided
- 1 to 2 teaspoons flaky sea salt
- 1 tablespoon fresh rosemary
Instructions
- In a large bowl, whisk together the flour, fine salt, and instant rise yeast until combined. Gradually pour in the lukewarm water and stir until all flour is incorporated. Drizzle 2 tablespoons of olive oil and gently mix.
- Cover the bowl and let it rise for 1 1/2 to 2 hours until doubled in size, or rest in the fridge for 24 to 72 hours for better flavor.
- Prepare your baking pan by lightly greasing it.
- Once risen, stretch the dough gently into a rectangle shape without deflating it too much.
- Pour the dough into the prepared pan and let it rest for at least 45 minutes or until doubled in bulk.
- Preheat your oven to 425°F (400°F for convection).
- Drizzle with remaining olive oil, poke holes into the top, and sprinkle with flaky salt and fresh rosemary.
- Bake for 25 to 30 minutes until golden brown and crispy. Let it rest for 10 minutes before slicing.
