  • ½ cup heavy cream

  • 1 tbsp soy sauce
  • Pan drippings from roasting pork (fat skimmed, or ¼ cup extra chicken broth)

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Cook the onion with salt until softened, about 5 minutes.
  3. Whisk in the flour and cook for 1-2 minutes until golden.
  4. Add the chicken broth and white wine gradually, whisking until smooth.
  5. Stir in mustard, cream, pepper, and soy sauce, along with any drippings.
  6. Simmer for 3-4 minutes until thickened, adjusting seasoning as needed.

Notes

For gluten-free, substitute flour with cornstarch. You can prepare ahead and store in the fridge for up to 4 days.
