  • 1 jalapeño (sliced)
  • ¼ cup chopped fresh cilantro
  • Cilantro Lime Crema (½ cup sour cream mixed with lime juice and cilantro)
  • 8 small corn or flour tortillas
  • Lime wedges for serving

Instructions

  1. Marinate the Chicken: In a large bowl, whisk together the olive oil, lime juice, and Chicken Taco Seasoning. Place the chicken thighs into the bowl and toss until well coated. Cover and let marinate for a minimum of 30 minutes at room temperature or up to 24 hours in the fridge for optimal flavor.
  2. Preheat the Grill: Get your grill nice and hot at medium-high heat while the chicken marinates.
  3. Cook the Chicken: Remove the chicken from the marinade, letting excess marinade drip off, and place it directly on the grill. Cook for 4-6 minutes on each side, or until the chicken reaches an internal temperature of 165°F.
  4. Rest and Slice: Once cooked, remove the chicken from the grill and let it rest for about 5 minutes. Slice the chicken into strips.
  5. Warm the Tortillas: While the chicken rests, warm the tortillas on the grill for about 30 seconds on each side or wrap them in a damp paper towel and microwave for 10-15 seconds.
  6. Assemble the Tacos: On each tortilla, layer the sliced chicken, followed by lettuce, red onion, jalapeño, cilantro, and drizzle with Cilantro Lime Crema. Serve with lime wedges.
