  • 1 lb ground beef
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • ½ cup milk
  • 1 cup shredded cheddar
  • ½ cup grated Parmesan
  • 3 cups low-sodium beef broth
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 3 tbsp butter
  • 2 tbsp fresh parsley, chopped (optional for garnish)

Instructions

  1. Heat 1 tablespoon of butter in a large skillet over medium heat. Sauté the onion until soft and translucent.
  2. Add the ground beef, breaking it apart as it cooks until browned. Drain any excess fat.
  3. Stir in the minced garlic and cook for about a minute until fragrant.
  4. Add the rice, beef broth, Italian seasoning, salt, and pepper. Stir to combine and bring to a gentle boil.
  5. Reduce the heat, cover, and let it simmer for 18-20 minutes until the rice is tender.
  6. In a small saucepan, melt 2 tablespoons of butter and stir in the cheddar, Parmesan, and milk until creamy.
  7. Once the rice is cooked, pour the cheese sauce into the skillet and stir to combine.
  8. Cook uncovered for a few minutes to meld the flavors. Serve warm, garnished with parsley if desired.

Notes

Use room temperature butter for easier melting. Leftovers can be stored in an airtight container for up to 3 days or frozen for 2 months.
