- 1 pound ground beef
- 2 tablespoons taco seasoning
- 1/4 cup salsa
- 1/2 cup water
- 1 head romaine lettuce, chopped
- 2 cups halved cherry tomatoes
- 2 avocados, sliced
- 1 cup sweet corn
- 1/4 cup diced red onions
- 1 cup shredded Mexican cheese blend
- Tortilla strips or chips
- Sour cream for topping
- Cilantro for topping
- More salsa for topping
- Chipotle Ranch Dressing (homemade)
Instructions
- Make the Chipotle Ranch Dressing: In a mixing bowl, combine sour cream, buttermilk, adobo sauce, garlic powder, onion powder, and lime juice. Whisk until smooth, add salt and pepper to taste, and set aside.
- Cook the Beef: Heat a large skillet over medium-high heat and add ground beef. Sear for 3-4 minutes, then break it apart and cook until browned. Drain excess fat.
- Add Seasoning: Reduce heat to medium, stir in taco seasoning and water. Simmer until reduced, then mix in salsa.
- Assemble the Salad: In serving bowls, layer romaine, cherry tomatoes, corn, red onions, beef, cheese, tortilla strips, and avocado.
- Garnish & Serve: Top with sour cream, cilantro, and drizzle with chipotle ranch dressing. Serve with extra salsa if desired.
Notes
For a lighter option, substitute ground beef with ground turkey or beans. Keep toppings separate for best texture when storing.
