- 3/4 pound sirloin steak, thinly sliced against the grain
- 3/4 pound dried wide rice noodles
- 1 medium yellow onion, sliced
- 2 scallions, cut into medium slices (whites and greens separated)
- 1 to 2 tablespoons Chinese shaoxing wine or dry sherry
- 1 to 2 cups fresh bean sprouts
- Vegetable oil for cooking
- 1/2 teaspoon baking soda
- 1 teaspoon cornstarch
- 1 teaspoon light soy sauce
- 1 teaspoon oyster sauce
- 1/2 teaspoon granulated sugar
- 1/2 tablespoon Chinese shaoxing cooking wine or dry sherry
- 2 teaspoons vegetable oil
- 1/4 teaspoon ground black pepper or white pepper powder
- 1 1/2 tablespoons light soy sauce
- 1 1/2 tablespoons oyster sauce
- 1 tablespoon dark soy sauce, plus more as needed
- A pinch of granulated sugar
Instructions
- Marinate the Beef: In a bowl, combine the sliced sirloin beef with baking soda, cornstarch, light soy sauce, oyster sauce, granulated sugar, Chinese cooking wine, vegetable oil, and black pepper. Mix until the beef is well-coated and set aside for 20 minutes.
- Soften the Noodles: Soak dried noodles in very hot water for 10-15 minutes until slightly firm.
- Make the Sauce: In a small bowl, combine the light soy sauce, oyster sauce, dark soy sauce, and a pinch of granulated sugar. Set aside.
- Cook the Beef: Heat a large wok or skillet over medium-high heat with a splash of oil. Add in the marinated beef and stir-fry for 1-2 minutes until seared and slightly browned.
- Sauté Vegetables: In the same pan, add more oil, toss in sliced onions and the white parts of the scallions, and stir-fry until softened, about 2-3 minutes.
- Add Noodles: Add the softened noodles and gradually pour in the sauce, tossing to coat.
- Combine: Return the seared beef to the pan, mix everything well, and adjust seasoning and color with dark soy sauce if desired.
- Serve: Transfer your Beef Chow Fun into serving dishes immediately and top with extra bean sprouts.
Notes
Consider using a wok for better heat distribution. Do not overcrowd the pan while cooking.
