- 2 pounds boneless beef chuck roast, excess fat trimmed
- 1 teaspoon Kosher salt, plus more to taste
- ½ teaspoon Ground black pepper, plus more to taste
- Olive oil for cooking
- 1 medium yellow onion, diced
- 2 stalks celery, diced
- 2 medium carrots, peeled and diced
- 2 cups sliced cremini mushrooms
- 6 cloves garlic, minced
- 2 teaspoons fresh thyme leaves
- 1 cup canned diced tomatoes, drained
- 2 teaspoons Worcestershire sauce
- 6 cups beef broth, plus more as needed
- 1 cup water
- 1 cup pearl barley
- Fresh parsley for garnish
Instructions
- Remove any excess fat from your beef and cut it into ½-inch cubes. Season generously with salt and pepper.
- Heat a good splash of olive oil in a large pot over medium-high heat. Add the beef in batches to avoid overcrowding. Sear until browned all over, about 5-7 minutes. Transfer to a plate and set aside.
- Add more olive oil if needed and toss in your diced onion, celery, and carrots. Sauté for about 8 minutes until softened and fragrant.
- Stir in your minced garlic, thyme, and mushrooms. Cook for an additional 3 minutes.
- Return the beef to the pot and stir in the canned tomatoes and Worcestershire sauce. Pour in the beef broth and water, seasoning again with salt and pepper. Bring everything to a boil.
- Once boiling, reduce the heat and let it simmer for about 35 minutes.
- Stir in your pearl barley, cooking for another 40 minutes or until tender. Adjust broth as needed and taste for seasoning.
- Ladle the soup into bowls and garnish with fresh parsley. Enjoy warm.
Notes
Look for grass-fed beef for a richer flavor. This soup can be frozen for up to 3 months and is meal prep friendly as it tastes even better the next day.
