Description
Delicious BBQ Tofu Bowls featuring crispy tofu marinated in BBQ sauce and topped with a fresh mango salsa.
Ingredients

- 2 x 225g packs extra firm smoked tofu
- 6 heaped tbsp good-quality BBQ sauce
- 5 tbsp cornflour
- 3 tbsp neutral oil (vegetable or sunflower)
- Sea salt & freshly ground black pepper
- White rice (cooked to package instructions)
- Chilli flakes (for that extra kick!)
- 2 ripe mangos (finely diced)
- 1 avocado (finely diced)
- 1/2 bunch coriander (finely chopped)
- 1/2 red onion (finely chopped)
- 1/2 red chilli (finely chopped)
- Juice of 1 lime
- 1 tbsp olive oil
Instructions
- Drain the tofu and press to remove excess moisture. Cut into bite-size cubes and press again to remove moisture from the surface.
- Combine the tofu cubes with 2 tablespoons of BBQ sauce and let marinate.
- In a bowl, mix together diced mango, avocado, coriander, red onion, and chili. Squeeze in lime juice and drizzle with olive oil. Season to taste and refrigerate.
- Coat each tofu cube in a mixture of cornflour, salt, and pepper.
- Heat oil in a large pan, and fry the tofu cubes for 2-3 minutes on each side until golden. Add remaining BBQ sauce and stir to coat.
- Serve tofu over cooked rice and top with mango salsa and chili flakes.
Notes
Use extra-firm tofu for best results. Feel free to customize the ingredients in the salsa according to your taste.
