BBQ Tofu Bowls with Amazing Mango Salsa

Description

Delicious BBQ Tofu Bowls featuring crispy tofu marinated in BBQ sauce and topped with a fresh mango salsa.


Ingredients

  • 2 x 225g packs extra firm smoked tofu
  • 6 heaped tbsp good-quality BBQ sauce
  • 5 tbsp cornflour
  • 3 tbsp neutral oil (vegetable or sunflower)
  • Sea salt & freshly ground black pepper
  • White rice (cooked to package instructions)
  • Chilli flakes (for that extra kick!)
  • 2 ripe mangos (finely diced)
  • 1 avocado (finely diced)
  • 1/2 bunch coriander (finely chopped)
  • 1/2 red onion (finely chopped)
  • 1/2 red chilli (finely chopped)
  • Juice of 1 lime
  • 1 tbsp olive oil

Instructions

  1. Drain the tofu and press to remove excess moisture. Cut into bite-size cubes and press again to remove moisture from the surface.
  2. Combine the tofu cubes with 2 tablespoons of BBQ sauce and let marinate.
  3. In a bowl, mix together diced mango, avocado, coriander, red onion, and chili. Squeeze in lime juice and drizzle with olive oil. Season to taste and refrigerate.
  4. Coat each tofu cube in a mixture of cornflour, salt, and pepper.
  5. Heat oil in a large pan, and fry the tofu cubes for 2-3 minutes on each side until golden. Add remaining BBQ sauce and stir to coat.
  6. Serve tofu over cooked rice and top with mango salsa and chili flakes.

Notes

Use extra-firm tofu for best results. Feel free to customize the ingredients in the salsa according to your taste.
