Ingredients

  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/2 cup chopped cauliflower
  • 1/4 cup chopped carrots
  • 2 cloves garlic, minced
  • 1/2 inch ginger, minced
  • 1/4 cup chopped red or orange bell pepper
  • 2 tablespoons BBQ sauce
  • 1 teaspoon chipotle pepper powder
  • 1 teaspoon onion flakes or powder
  • 1/2 teaspoon salt
  • 2 tablespoons flaxmeal
  • 2 tablespoons sesame seeds
  • 1/4 cup breadcrumbs
  • 2 to 4 tablespoons all-purpose flour
  • Burger toppings of choice
  • Burger buns or greens as the base
  • 2 tablespoons BBQ sauce for glazing
  • 2 teaspoons hot sauce (optional)
  • 2 cups shredded cabbage
  • 1/3 cup thinly sliced mango or apple
  • 1/2 cup shredded carrot
  • 3 to 4 tablespoons vegan mayo or non-dairy yogurt
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons maple syrup
  • Dashes of salt, pepper, celery seeds, and herbs of choice

Instructions

  1. Make the Slaw: Combine sliced mango, carrot, and cabbage with vegan mayo, apple cider vinegar, maple syrup, salt, and pepper. Mix and set aside.
  2. Prepare the Lentils: Rinse lentils, combine with water, garlic, and salt in a pot. Boil, then simmer until tender, about 14-16 minutes.
  3. Chop the Veggies: Finely chop cauliflower, ginger, garlic, carrot, and bell pepper; mix with lentils.
  4. Mix It All Together: Add BBQ sauce, spices, flaxmeal, sesame seeds, breadcrumbs, and flour to the lentil mixture; shape into patties.
  5. Baking Options: Preheat oven to 400°F, line a baking sheet, place patties, glaze with BBQ sauce, and bake for 20-25 minutes.
  6. Pan-Frying Option: Heat skillet, cook patties for 3-4 minutes on each side until golden brown.
  7. Assemble Burger: Layer with toppings of choice and serve on buns or greens.
