A delicious and healthy vegan red lentil veggie burger packed with flavor and perfect for any BBQ.
Ingredients

- 3/4 cup split red lentils
- 2 cups water
- 1/8 teaspoon garlic powder
- 1/8 teaspoon salt
- 1/2 cup chopped cauliflower
- 1/4 cup chopped carrots
- 2 cloves garlic, minced
- 1/2 inch ginger, minced
- 1/4 cup chopped red or orange bell pepper
- 2 tablespoons BBQ sauce
- 1 teaspoon chipotle pepper powder
- 1 teaspoon onion flakes or powder
- 1/2 teaspoon salt
- 2 tablespoons flaxmeal
- 2 tablespoons sesame seeds
- 1/4 cup breadcrumbs
- 2 to 4 tablespoons all-purpose flour
- Burger toppings of choice
- Burger buns or greens as the base
- 2 tablespoons BBQ sauce for glazing
- 2 teaspoons hot sauce (optional)
- 2 cups shredded cabbage
- 1/3 cup thinly sliced mango or apple
- 1/2 cup shredded carrot
- 3 to 4 tablespoons vegan mayo or non-dairy yogurt
- 2 teaspoons apple cider vinegar
- 2 teaspoons maple syrup
- Dashes of salt, pepper, celery seeds, and herbs of choice
Instructions
- Make the Slaw: Combine sliced mango, carrot, and cabbage with vegan mayo, apple cider vinegar, maple syrup, salt, and pepper. Mix and set aside.
- Prepare the Lentils: Rinse lentils, combine with water, garlic, and salt in a pot. Boil, then simmer until tender, about 14-16 minutes.
- Chop the Veggies: Finely chop cauliflower, ginger, garlic, carrot, and bell pepper; mix with lentils.
- Mix It All Together: Add BBQ sauce, spices, flaxmeal, sesame seeds, breadcrumbs, and flour to the lentil mixture; shape into patties.
- Baking Options: Preheat oven to 400°F, line a baking sheet, place patties, glaze with BBQ sauce, and bake for 20-25 minutes.
- Pan-Frying Option: Heat skillet, cook patties for 3-4 minutes on each side until golden brown.
- Assemble Burger: Layer with toppings of choice and serve on buns or greens.

Let the mixture sit before shaping to meld flavors. Adjust with breadcrumbs or flour if too wet.
