- 1 or 2 avocados (pitted, peeled, and sliced)
- Sriracha cashew cream or cilantro lime cashew sour cream
- 3 crusty or soft sandwich rolls (split)
- 1 to 2 limes (freshly squeezed juice)
- Hot sauce (optional)
Instructions
- Prepare your veggies and beans: Slice the cabbage, radishes, and red onion, then chop your tomato or red pepper.
- Slice your rolls: Carefully split the sandwich rolls and make a slight hollow area in the top half to hold more filling.
- Spread the refried black beans: Generously cover the bottom half of each roll with the warm black beans.
- Layer the veggies: Begin stacking! Place avocado slices, followed by a ring of radishes, red onion, and top it off with shredded cabbage.
- Add your cream spread: Generously spread your desired condiment on the top roll.
- Squeeze lime juice: Drizzle fresh lime juice over the bottom layer before capping it off with the top half of the roll.
- Serve and enjoy: Enjoy them immediately or wrap them up for a delightful on-the-go lunch.
