Ingredients

  • 5 to 6 pounds beef brisket (flat cut, excess fat trimmed)
  • 2 large yellow onions, sliced
  • 8 garlic cloves, crushed
  • 3 bay leaves
  • 1/4 cup beef broth
  • 2 teaspoons whole grain dijon mustard
  • Salt and pepper to taste
  • 3 teaspoons light brown sugar
  • 2 teaspoons smoked paprika
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon Italian seasoning
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 4 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 2 cups BBQ sauce
  • 1/2 cup apricot preserves or jam
  • 1 tablespoon whole grain dijon mustard

Instructions

  1. Prepare the Dry Rub: In a bowl, mix all the dry rub ingredients well. Rub the brisket generously on both sides and let it sit for 30 minutes to 1 hour.
  2. Mix the BBQ Glaze: In another bowl, combine the BBQ sauce, apricot preserves, and dijon mustard until well blended.
  3. Prepare the Slow Cooker: Layer sliced onions on the bottom of a slow cooker. Add crushed garlic, bay leaves, beef broth, 2 teaspoons dijon mustard, and season with salt and pepper. Stir in about 3/4 cup of the prepared apricot BBQ glaze.
  4. Cook the Brisket: Place the brisket on top, fat side up. Cover and cook on LOW for 10 hours or HIGH for 6 hours until fork-tender.
  5. Broil for Char: Once ready, transfer the brisket to a sheet pan, brush with reserved BBQ glaze, and broil on high for 4-5 minutes until charred.
  6. Finish Cooking: Turn the brisket over, brush with more glaze, and broil for an additional 4-5 minutes.
  7. Slice and Serve: Let the brisket rest for 15 minutes before slicing against the grain. Serve with remaining BBQ glaze.

Notes

For richer flavor, consider marinating the brisket overnight with the dry rub. Store leftovers in an airtight container for up to 4-5 days.
