Ingredients

- 1/2 cup applesauce
- 1/2 cup water
- 3 tbsp oil (or additional applesauce)
- 2 tsp pure vanilla extract
- 1 tbsp white vinegar
- 1 1/2 cups flour (white, spelt, or oat)
- 1/3 cup sugar
- 3/4 tsp salt
- 3/4 tsp baking soda
- 3/4 tsp baking powder
- 1/4 tsp cinnamon (optional: 1/4 tsp allspice)
- Optional add-ins: 1/2 cup raisins, chopped walnuts, or shredded coconut
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the applesauce, water, oil, vanilla extract, and vinegar until smooth.
- In a separate bowl, combine the flour, sugar, salt, baking soda, baking powder, and spices, whisking to mix evenly.
- Gradually add the dry mixture to the wet mixture, folding gently until no dry flour remains.
- Grease or line an 8-inch square or round cake pan with parchment paper and pour the batter evenly into the pan.
- Bake for approximately 18-20 minutes, or until a toothpick comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack.
Notes
This cake can be stored at room temperature for up to 3 days or in the fridge for up to a week. It freezes well for up to 3 months.
