Ingredients

  • 2 eggs

  • 1 tablespoon fresh grated ginger or 1 teaspoon ground ginger
  • 1 large apple, unpeeled and diced
  • 1 cup walnuts, toasted and chopped (optional)
  • For the Crumble Top (optional):
  • 1/4 cup oats
  • 1/4 cup flour
  • 1/4 cup brown sugar or coconut sugar
  • 2 tablespoons unsalted butter, softened
  • Pinch of salt
  • Pinch of cinnamon

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a muffin pan.
  2. Prepare the crumble topping by mixing oats, flour, sugar, butter, salt, and cinnamon in a small bowl.
  3. In a large bowl, mix the dry ingredients: flour, oats, sugar, cinnamon, cloves, baking powder, baking soda, and salt.
  4. In another bowl, whisk wet ingredients: avocado oil, eggs, molasses, applesauce, vanilla, and ginger. Fold in diced apples and walnuts.
  5. Combine wet and dry ingredients, mixing gently until just combined.
  6. Fill each muffin cup about 1/2 inch from the top, and sprinkle crumble topping if using.
  7. Bake for 5 minutes at 400°F, then reduce to 350°F (175°C) and bake for 12-13 minutes more.
  8. Let muffins cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.
