Ingredients

- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup non-dairy milk
- 1/4 cup sugar
- 2 cups diced apples
- Oil for frying
- Powdered sugar for dusting (optional)
Instructions
- In a large bowl, whisk together the flour, baking powder, cinnamon, and salt until well combined.
- In another bowl, whisk together the non-dairy milk and sugar until the sugar is dissolved.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the diced apples.
- Heat about 2 inches of oil in a deep skillet over medium heat until it reaches 350°F.
- Carefully drop spoonfuls of batter into the hot oil and fry until golden brown, about 2-3 minutes on each side.
- Remove the fritters with a slotted spoon and let them drain on paper towels.
- Dust with powdered sugar if desired and serve warm.
Notes
Best enjoyed fresh but can be stored in an airtight container at room temperature for up to 1 day or frozen for up to 2 months.
