- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup almond flour
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1/2 teaspoon salt
- Slivered almonds for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy, about 2 to 3 minutes.
- Gradually add in the almond flour, all-purpose flour, baking powder, vanilla extract, almond extract, and salt. Mix just until combined.
- Scoop or roll the dough into small balls, about 1 tablespoon each, and place them 2 inches apart on the baking sheet.
- Gently press a few slivered almonds on top of each cookie.
- Bake for 12 to 15 minutes, or until the edges are lightly golden.
- Transfer the cookies to a wire rack and cool completely before serving.
