Ingredients

  • 1 cup almond flour
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1/2 teaspoon salt
  • Slivered almonds for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Cream together the softened butter and granulated sugar until light and fluffy, about 2 to 3 minutes.
  4. Gradually add in the almond flour, all-purpose flour, baking powder, vanilla extract, almond extract, and salt. Mix just until combined.
  5. Scoop or roll the dough into small balls, about 1 tablespoon each, and place them 2 inches apart on the baking sheet.
  6. Gently press a few slivered almonds on top of each cookie.
  7. Bake for 12 to 15 minutes, or until the edges are lightly golden.
  8. Transfer the cookies to a wire rack and cool completely before serving.
