Description

Quick and delicious plant-based burritos packed with black beans, creamy avocado, and crunchy corn, perfect for busy weeknights.


Ingredients

  • 1 (15-ounce) can of Black Beans, rinsed and drained
  • 1 large ripe Avocado
  • ½ cup of Frozen or Canned Corn
  • ¼ cup of finely chopped Red Onion
  • ¼ cup of fresh Cilantro, chopped
  • 1 tablespoon of Lime Juice
  • ½ teaspoon of Cumin Powder
  • ¼ teaspoon of Chili Powder
  • Salt and Black Pepper, to taste
  • 4 large (10-inch) Flour Tortillas

Instructions

  1. In a medium-sized mixing bowl, mash the avocado with a fork and mix in lime juice.
  2. Add rinsed black beans, corn, red onion, and cilantro to the bowl.
  3. Sprinkle cumin, chili powder, salt, and pepper, then fold ingredients gently together.
  4. Warm tortillas in a skillet or microwave to improve pliability.
  5. Assemble by placing filling in the center of each tortilla and rolling it up.
  6. Serve immediately and enjoy!
