Ingredients

- 1 (15-ounce) can of Black Beans, rinsed and drained
- 1 large ripe Avocado
- ½ cup of Frozen or Canned Corn
- ¼ cup of finely chopped Red Onion
- ¼ cup of fresh Cilantro, chopped
- 1 tablespoon of Lime Juice
- ½ teaspoon of Cumin Powder
- ¼ teaspoon of Chili Powder
- Salt and Black Pepper, to taste
- 4 large (10-inch) Flour Tortillas
Instructions
- In a medium-sized mixing bowl, mash the avocado with a fork and mix in lime juice.
- Add rinsed black beans, corn, red onion, and cilantro to the bowl.
- Sprinkle cumin, chili powder, salt, and pepper, then fold ingredients gently together.
- Warm tortillas in a skillet or microwave to improve pliability.
- Assemble by placing filling in the center of each tortilla and rolling it up.
- Serve immediately and enjoy!
